Why they do not poop
A bear is not taking in regular meals while it is denned up, so there is no continuing supply of undigested food moving through its intestines.
9 Its gut is not entirely empty, though. It still produces mucus and sheds cells, and this material can collect into a compact mass known as a fecal plug.

So it is not simply months’ worth of ordinary feces accumulating in the bear’s body.
Why they do not pee
The kidneys do not completely stop working, but their filtration rate drops dramatically. In hibernating bears, the glomerular filtration rate — a measure of how much fluid the kidneys filter — decreases by about 70%.

What makes bears especially unusual is that water and components of urine can pass back through the bladder lining into the bloodstream, rather than continually building up in the bladder. That helps the animal conserve water while it is not drinking.

Urea is recycled rather than simply discarded
Urea is a nitrogen-containing waste product that mammals normally eliminate in urine. In bears, reabsorbing it is only part of the solution: the nitrogen also has to be handled safely.
Gut bacteria play an important role. They break down urea, and the recovered nitrogen can be used in making amino acids — the building blocks of proteins.
